Achieving the perfect croissant seems to be an endless quest. It has taken the best part of a year obsessing about different methods, recipes and different flours until we are happy with them. For now we are. These are made in the traditional way using top quality French flour and our wonderful local Ampersand cultured butter. They are a labour of love, made with sourdough starter and a small amount of organic yeast over 3 days to create a well developed flavour of multi layered buttery heaven.
